Would a neologism like "copygraphing" (same as copywriting but using charts and graphs instead of written words) make any sense? Unlike graphic design (where aesthetic principles come first), "copygraphing" would emphasize the underlying quantitative data.

Not to me it wouldn't. "Copy" in the word copywriting means "text." You want a word that replaces the idea of text with chart or graph. Charting? Graphing?
